
Snowcapped Asparagus

Are you looking for a delicious and simple vegetable, that provides a minimum amount of preparation and provides maximum nutrition? Have you thought about asparagus? Asparagus is both nutritious, easy to prepare and offers what many claim as cancer fighting ingredient, plus it tastes good! Try the following recipe that is simple and delicious!
Snowcapped Asparagus
3 pounds fresh asparagus spears
1/2 cup mayonnaise or Miracle Whip salad dressing
1 tablespoon milk
paprika
sliced pimento stuffed olives for garnish (optional)
Wash asparagus spears and break off the tough ends,
and remove any scales.
Tie stalks in 6 even bundles with kitchen twine and cook
upright in salted boiling water for 10 minutes.
Remove from water and immediately cover in ice water.
Drain asparagus and chill in the refrigerator until ready to serve.
Arrange chilled asparagus in bundles on your serving plate and
mix the mayonnaise and milk together. Mound on top of the
asparagus bundles and garnish with paprika & olive slices, if desired.
Yield : 6 servings
