Baked Potato Soup

You're off work and looking for something that is good to eat and relatively simple to make! Well, nothing warms the heart and fills you up like Baked Potato Soup, in February. Try this recipe to delight you and your family:
Baked Potato Soup
2 pounds peeled, roasted, and diced potatoes
8 slices of bacon, diced
4 Tablespoons real butter
1 cup diced onions
1/4 cup chopped green onions
1/2 cup chopped celery
1/3 cup All-Purpose flour
3 cups chicken broth
2 cups half-and-half
1 teaspoon salt
Fresh ground pepper to taste
8 oz. Cheddar cheese, shredded
1 - 8 oz. package sour cream
Sliced green onions, crumbled bacon, & shredded cheese for garnish
if desired
Boil 2 pounds of peeled and diced potatoes, covered in
water, until tender.
In large pan cook bacon until crisp. Drain on paper towels.
Add butter to pan with bacon drippings and saute onions and
celery until tender.
Add the flour and green onions and blend, and add the chicken
broth, cover and continue cooking until the mixture thickens
and all vegetable are tender.
Stir in the half-and-half, diced potatoes, salt, pepper, and cheese and
cook until the cheese is melted well. Add the sour cream and blend
making certain that the soup is hot.
Serve with garnishes......Serves 8.
