Chilled Buttermilk-Cucumber Soup

Summertime temperatures provide a challenge for something that is both hearty and refreshing at meal time. Well, try this Chilled Buttermilk-Cucumber Soup, that provides both flavor and nutrition, and is packed with a refreshing dose of fresh vegetables. Enjoy!

 

 

 

Chilled Buttermilk-Cucumber Soup

 

1 large cucumber, peeled and chopped
1 cup watercress
2 cups fresh, grade-A Buttermilk
fresh dill
salt and pepper

Garnish of sour cream, chopped tomatoes, red onion, and avocado

Peel and dice the cucumber and add to a food processor, with the watercress and
chopped until finely chopped. Add buttermilk and season with
salt and pepper, and dill.

Place in refrigerator to chill and for flavors to blend.

Meanwhile chop tomato, red onion and avocado. Mix and chill.

When ready to serve place in serving bowl, add dollop of sour cream to
soup, and garnish with the chilled tomatoes, onions and avocado.

Makes 4 servings.

Serve with your favorite bread sticks and/or a salad.
