Fancy Corn Fritters

'Tis the season for fresh corn from the garden. Many of you may be already getting an ear or two, that are fresh, tender, and juicy. These new season delicacies fresh from the garden are great to use in the following recipe, for a delightful combination of flavors.

Enjoy the following recipe:

 

Fancy Corn Fritters

2 tablespoons real butter

1 small red bell pepper, seeded and diced in 1/4 inch pieces
1 Jalapeno pepper, seeds & striffing removed, and finely diced.
three ears of fresh corn, husked and cleaned
1 1/2 cup all purpose flour
1/2 cup yellow cornmeal
2 tablespoons baking powder
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon red cayenne pepper (optional or to taste)
2 or 3 ounces of ham, diced into 1/4 inch pieces (optional)
5 fresh green onions, thinly sliced
3 eggs, lightly beaten
1 cup milk

Corn oil for frying

 

Melt the butter in a cast iron skillet and stir in the diced and prepared peppers.
Saute over medium heat for several minutes, until tender.

Meanwhile, drop the cleaned ears of corn into boiling water, for
1 to 3 minutes, depending on the tenderness of the fresh corn. Remove
from water and drop into a bath of cold water. With a knife,
removed the cooled corn from the cob into a mixing bowl and
retain the "milky" residue with the kernels.

Sift the flour and cornmeal together, into a mixing bowl, and stir in
the baking powder. Add the diced ham, eggs, corn, prepared peppers,
onions, and seasonings. Chill for one or more hours in the refrigerator.

Shape the chilled batter into firm balls and drop into the heated oil
that has reached 350 degrees. Fry until golden brown, removing
to drain away the excess oil.

Serve hot with your favorite summertime meal.
