

Serve Your Ducks As A Great
Appetizer

Many of us have added a "few extra pounds" through the holidays and have made a personal commitment to lose a few of them in the upcoming weeks, as we struggle to make meals less calorie intense. Well, just in time for duck season, this recipe "caught my eye" for Duck Poppers, that omits the traditional cream cheese filling and lessens the calorie intake, when prepared, but still maintaining the great flavors.

Bacon-Wrapped Duck Poppers
3 slices raw bacon
1/2 pound sliced duck breast
1 tablespoon Tabasco Sauce
1 tablespoon wine rice vinegar
1 table hoisin sauce
1 tablespoon sesame oil
1/2 small red onion
fresh cilantro
fresh Jalapeno peppers
Slice duck breast into 6 slices 1/4-1/2 inch thickness.
Mix the Tabasco, vinegar, hoisin sauce and sesame oil
and place in a zip-lock bag, adding the duck slices, to marinate
for three hours or over night.
Remove duck and discard marinade.
Blanch the raw bacon in boiling water for 30 seconds and remove cutting board
and cut slices in half.
Take the 6 bacon slices place a piece of duck on them and add a slice
of onion, Jalapeno slice and one or two cilantro leaves. Wrap the bacon
around other ingredients and secure with a toothpick. Cook in 400 degree
oven until bacon is crisp and duck is done (approx. 8-10 minutes).

This recipe makes 6 poppers, but is easily doubled or tripled for a crowd.
