No-Crust Custard Pie

1/2 stick Oleo (melted)
3 eggs
1 cup sugar

1 1/2 T. flour
1 lg. can evaporated milk
1 tsp. vanilla
Mix above ingredients and pour into a greased and floured pie plate (preferably metal). Sprinkle top with nutmeg, cinnamon, and all-spice. Cook @ 300 degrees until slightly brown and doesn't shake.

Joyce Gilbreath - Sweet Potato Pie

2 uncooked crusts
4 cups sweet potatoes - cooked and mashed
4 eggs
2 cups of sugar
1/2 c. (1 stick) oled
2 1/2 cups milk
 
mix above ingredients in sauce pan.  cook & stir on top of stove until it thickens. add pumpkin pie seasoning.  mix well and pour into unbaked crusts.  bake at 375% for about 45 minutes.
(I sometimes use vanilla instead of seasoning.)

Becky's Fruit Pizza

1 - 17 ounce package refrigerated ready to slice sugar cookie dough roll
1 - 8 ounce package cream cheese
1/2 cup sugar
1/2 teaspoon vanilla extract
1 cup fresh strawberries halved
2 small bananas sliced
1 medium peach, peeled and thinly sliced
1/2 cup halved seedless green grapes
1/2 medium apple thinly sliced
1/4 cup fresh blueberries
3 cantaloupe balls
1/2 cup orange marmalade
2 tablespoons water

Line a 12 inch pizza pan with foil, allowing foil to overlap rim of pan. Slice cookie dough into 1/8 inch slices. Arrange dough slices in circular pattern in pizza pan, starting at outer edge of pan and overlapping slices at center.  Bake at 325 for 20 to 25 minutes or until lightly browned. Cool completely.

Combine cream cheese, sugar, and vanilla: beat until smooth. Spread mixture over cooled cookie crust. Arrange fruit over top as desired. Combine marmalade and water. Spoon evenly over fruit. Chill.  Before serving, transfer pizza to serving platter.
Makes a pretty dessert.

Debra's Strawberry Cake (from Bertha Stribling)

1 duncan hines white cake mix
1-3oz package strawberry jello
3/4 cup milk
4 eggs
3/4 cup crisco oil
1/2 box strawberries (1 1/2 cups)
1/2 cup coconut
1/2 cup pecans

Combine cake mix, jello, milk, crisco, eggs. Mix well. Add strawberries, coconut, pecans. Bake at 350 until done. Makes 3 layers.
Cool
 
Icing
1 box powdered sugar
1-3 oz package strawberry jello
1/2 box of strawberries
1/2 stick margerine
1/2 cup coconut
1/2 cup pecans

Sift powdered sugar and mix with melted margerine. Add jello and mix well. Add pecans and coconut.

APPLE DUMPLINGS

2 Granny Smith apples, cut into 8 quarters
2 cans crescent rolls
1 1/2 c. sugar
2 sticks real butter
1 tsp. vanilla
1tsp. cinnamon
1 ( 12-oz.) can Mountain Dew

Mix sugar, cinnamon, butter and vanilla together. Pour over apples, wrapped in crescent rolls. Pour Mountain Dew over top of all. Bake for 45 minutes.

Cream Cheese Sopaipillas

2 pkgs. Crescent rolls

2 8 0z. pkgs. cream cheese, softened

1 cup sugar

1 tsp. vanilla

1 stick butter

1/2 cup sugar

cinnamon

Spread 1 pkg crescent rolls in a 9 x 13 pan. Mix cream cheese, sugar (1 cup), and vanilla together. Spread on top of dough. Top with other pkg. of crescent rolls. Melt butter and mix with  1/2 cup sugar and pour on top. Sprinkle with cinnamon. Bake at 350 degrees for about 30 minutes.

Peanut Butter Rice Krispies

2 cups sugar
2 cups karo syrup
2 cups Peanut Butter
1 Box of Rice Krispies
 
Melt syrup & sugar, add peanut butter until melted, then add rice krispies until thick
Pour in pan and let cool. 
Cut into squares

Sweet Potato Pie

1/3 c. butter or marg., softened
1/2 c. sugar
2 eggs, lightly beaten 
3/4 c. evap. milk
2 c. mashed sw. potatoes
1 t. vanilla extract
1/2 t. cinnamon
1/2 t. nutmeg

In mixing bowl, cream butter & sugar.  Add eggs; mix well.  Add milk, sw. potatoes, vanilla, cinnamon and nutmeg; mix well.  Pour into 9 in. pie shell.  Bake @425 degrees for 15 mins.  Reduce heat to 350; bake 35-40 mins longer.  I cover edge of pie crust to prevent burning.  Cool. Store in refrigerator.

MEXICAN WEDDING CAKE

2 CUPS SUGAR 2 CUPS FLOUR
1 TSP. VANILLA 1 TSP. BAKING SODA
1 20 0Z. CAN OF CRUSHED PINEAPPLE

MIX ALL INGREDIENTS TOGETHER. POUR INTO GREASED AND FLOURED 9 X 13 PAN AND BAKE AT 350 DEGREES FOR 30 MINUTES. COOL.

ICING

1 8 OZ. CREAM CHEESE 1/2 CUP BUTTER
1/2 CUP CHOPPED PECANS 1 TSP. VANILLA
1 BOX OF POWDERED SUGAR
CREAM SOFTENED BUTTER AND CREAM CHEESE TOGETHER ADD VANILLA AND SUGAR. ADD PECANS GRADUALLY. ICE CAKE AFTER IT HAS COOLED.

Grandma's Best Ever Chocolate Pie

3/4 cup sugar

2 T. cocoa

3 T. Flour

pinch salt

2 cups sweet milk

1 small can evaporated milk

3 egg yolks, beaten well

1 T. butter

1 tsp. vanilla

1 cooked 9" pie crust

Sift dry ingredients together in a sauce pan. Mix well. Beat egg yolks well in a bowl. Add evaporated milk and 2 cups sweet milk. Stir all together into the sauce pan. Let cook on moderate heat until it thickens, stirring almost constantly for smoothness. When mixture is thickened, add butter and vanilla. Pour into a baked pie crust. Top with meringue and brown in the oven. Bake at 300-325 degrees.

MAMAW'S CHEWIES

1 LB. BROWN SUGAR 2 EGGS
1 CUP CHOPPED PECANS 1 TSP. VANILLA
1 STICK BUTTER, SOFTENED 1 1/2 FLOUR

CREAM SUGAR, BUTTER, EGGS AND VANILLA TOGETHER. ADD FLOUR AND PECANS. BAKE IN 9 X 13 GREASED PAN AT 350 FOR 30 MINUTES.

POSSUM PIE (RAGAN'S FAVORITE)

CRUST: MIX 1 STICK OF BUTTER WITH 1 1/2 CUP OF FLOUR WITH A FORK. ADD 1 CUP OF CHOPPED PECANS. PRESS INTO BOTTOM OF A 9 X 13 BAKING DISH AND BAKE AT
375 FOR 20 MINUTES. COOL BEFORE ADDING LAYERS.
1ST LAYER- MIX 8 OZ. SOFTENED CREAM CHEESE, 1 CUP POWDERED SUGAR AND 1/2 OF A LARGE TUB OF COOL WHIP. SPREAD OVER CRUST.  2ND LAYER- MIX 2 3OZ. PKGS. OF INSTANT CHOCOLATE PUDDING MIX WITH 3 CUPS OF MILK AND 1 TSP. VANILLA. SPREAD OVER FIRST LAYER.LET SET FOR AT LEAST AND HOUR IN THE REFRIGERATOR. THEN SPREAD THE REMAINING COOL WHIP OVER TOP LAYER BEFORE SERVING.

Ice Cream Cookies

1-cup sugar
1 cup shorting
2 eggs
2 cups flour
2 t baking powder
2 t vanilla
Pinch of salt

Mix sugar and shorting together, add eggs and vanilla. Mix flour, baking powder, salt add to mixture. Drop on cookie greased cookie sheet. Bake at 350 degree until outer edge started to brown. Sprinkle with powder sugar while warm.

Grandma’s Fluffy Frosting

3/4 Cup Sugar
1/4 Cup Light Corn syrup
2 egg whites
2 T. water
1/4 cream of tarter
Handful of Miniature Marshmallows

Combine first five ingredients cook in top of double boiler, beating constantly until mixture stands in peaks. Add marshmallow just before mixture stands in peaks.

Inn Keeper's Pie

1 - 9: pie crust

1/2 (4 oz.) bar sweet cooking chocolate
1/2 cup water
2/3 cup sugar

1/4 cup butter
1 1/2 tsp. vanilla

1 cup all-purpose flour

3/4 cup sugar

1 tsp. baking powder

1/2 tsp. salt

1/4 cup shortening

1/2 cup milk

1/2 tsp vanilla

1 egg

1/2 cup finely chopped nuts

Heat oven to 350 degrees. Heat chocolate and water over low heat until melted. Add 2/3 cup sugar; heat to boiling, stirring constantly. Remove from heat. Stir in butter and 1 1/2 tsp. vanilla (chocolate mixture will be thin). Beat remaining ingredients, except egg and nuts, in a small mixer bowl on low speed until well blended. Beat on medium speed, scraping the bowl, for 2 minutes. Add egg, beat, scraping bowl, for 2 minutes longer. Pour into pastry lined pie pan. Sprinkle with nuts. Bake 55 minutes. Serve with whipped cream.

Chocolate Cheese Cake

4 pkgs. Cream cheese

1 can condensed milk

3 eggs

1 tsp. vanilla

2 boxes white chocolate melted

2 tsp butter melted

1 box cookies crushed

Mix cream cheese & milk, until smooth, add 1 egg at a time, then vanilla and chocolate. Melt butter and crushed cookies. Put in spring form pan & press crust in bottom. Spray the sides of pan with cooking spray, and fill curst. Bake at 350 degrees for 45 minutes. Cool
on bakers rack.

Puttin' On The Ritz Pie

22 Ritz Crackers, crushed

3 beaten egg whites

3/4 cup sugar

1 cup chopped pecans

1 tsp vanilla

1 tsp baking powder

Fold crackers, sugar, pecans, vanilla, and baking powder into egg wites. Spray a 9" pie pan with Pam. Fill with mixture and bake at 325 degrees for 25 to 30 minutes.

Note: make sure egg whites are stiff.

Blueberry-Banana Pie

1 (8 oz) pkg. cream cheese, softened

1/3 cup sugar

1 baked 9" pastry shell or graham cracker crust

2 bananas, sliced

1 can blueberry pie filling

2 cups Cool Whip

Combine cream cheese and sugar. Beat at high speed with an electric mixer until light and fluffy. Spread evenly in bottom of cooled pastry shell or crust. Arrange banana slices on cream cheese layer. Spread pie filling over bananas. Top with Cool Whip and chill until ready to serve.
