

4th of July Food to Please a Crowd

Beef brisket is a favorite of everyone and can be cooked slowly in the oven, while you
prepare other menu items.
You're expecting a crowd for the 4th of July. Where do you begin to feed a large group? Well, how about trying this simple menu, that is both hearty and filling, and sure to please everyone? Put a beef brisket in the oven and let it cook on low heat, all night, while you sleep and do other things. Prepare this hominy recipe and fry some fried green tomatoes. Add a green salad and ask a couple of your guests to bring a favorite dessert and bread items. Independence Day lunch or dinner is ready, and you're not stressed to the max, either!


Round-up Hominy
1/2 pound ground beef
1/2 pound bacon, diced
1 large onion
2 tablespoons minced garlic
2 - 4 seeded and diced Jalapeno peppers (depending on desired heat)
2 - 6 pound cans of white or yellow hominy, drained
3 - 4oz. cans of green chilies
1 - 32 oz. container dairy sour cream
1 - 32 oz. bag grated cheddar-montery jack cheese blend
Sea Salt and fresh ground black pepper to taste.
In a 12-inch Dutch oven, or deep cast iron skillet with lid, brown ground beef and bacon
until done. Remove meat to a paper towel lined plate, leaving drippings in the pan. Cook
onion, garlic, and Jalapeno peppers in drippings, until onion is translucent. Add the
cooked meat, hominy and green chillies, simmering until hominy is heated through.
Remove from heat, and allow to cool for approximately 10 minutes. Add sour cream
salt, pepper, and cheeses, mixing well.
Serves 20 people.
Enjoy with brisket, salad, fried green tomatoes, rolls, and dessert!!!
